The improved ACMC Table Top Temperer features state of the art electronics that are designed for simple, reliable, and durable continuous operation. The digital temperature setting and readout makes it easy to temper all kinds of chocolate: milk, dark, and white. 

Tempering chocolate produces a nice sheen. If you don't temper the chocolate it will allow a 'bloom' to be formed. Blooms look like mold on cheese.

The heating and cooling process is what makes the chocolate look professional.
